Let's Brunch Bitches! Sausage, Gouda & Onion Frittata

More and more I find that it's all about brunch which includes a frittata and champs! #brunchingbitches Here's a recipe for a Chicken Sausage, Gouda & Onion Frittata that's flavorful and pairs well with any boozy side. Cheers!

RECIPE:

8 Eggs

3 tablespoons heavy cream

1/2 cup grated Gouda Cheese

salt/pepper

2 tablespoons butter

1/2 red onion diced

1 leek thickly sliced

4 small red potatoes diced

1 tablespoon dried Rosemary

White Wine - splash as needed

2 Chicken Sausage Links diced

grated Parmigiano Reggiano Cheese for topping


INSTRUCTIONS:

  1. Preheat oven to 400 degrees.

  2. Heat the butter in a 10 inch non-stick pan on medium heat. Once hot and melted, add the potatoes, salt/pepper and rosemary. Cook about 10 minutes. Add the onion, leek and cook another 5 more minutes. If ever the pan gets a bit dry, add a splash of the wine. Add the sausage for another 5 more minutes until heated through.

  3. Meanwhile beat the eggs, whipping cream, gouda cheese, salt/pepper in a separate bowl. Add to the pan once the sausage has heated.

  4. DON'T STIR. Gently pull the egg away from the edges so all the uncooked egg can get to the sides and bottom to cook. Cook until the frittata is half set for about 2 to 3 minutes.

  5. Transfer the pan into the oven and bake until the frittata is fully cooked for about 10 to 12 minutes. Let rest about 5 minutes before cutting. Sprinkle with the Parmigiano.
