I Have a Need for Wings

This weekend I went to Mission Bay Park in San Diego and saw families lounging on the beach barbecuing and enjoying the beautiful warm weather we've been having. Obviously, there was plenty of food all over the place which got me thinking about my favorite appetizer... WINGS! These Cesar Smothered Wings are one of my favorite versions to serve. I can eat the whole damn platter on my own so the social pressure not to embarrassingly stuff my face keeps me from doing it... sorta.

INGREDIENTS:

3 lbs Chicken Wings (split at the joint and tips thrown away)

1 cup Mayonnaise

3 tablespoons Worcestershire sauce

1 clove of garlic grated

Juice of 1 lemon

Salt and pepper

1/2 cup grated Parmesan


DIRECTIONS:

1) Preheat the oven 425 degrees. Line a baking sheet with foil and spray with non-cooking spray

2) Spread the chicken on the sheet pan and roast for 50 minutes. Flip halfway until crisp.

3) Meanwhile, wish the mayonnaise, Worcestershire, garlic, half of Parmesan and lemon juice in a big bowl. Season with salt and pepper. Save 1/2 cup of the sauce in a bowl for dipping.

4) Transfer the cooked wings into the large bowl of sauce and toss to coat. Place wings on serving platter and top with the rest of the Parmesan. Serve with the dipping sauce.
