Mango Fool Dessert

The whip cream on this little dish has subtle vanilla sweetness that enhances the already amazing mango. Originally this recipe was to be an easy-to-make-with-no-heat dessert but then I realized that you could make just the whip and have fun getting all hot and bothered by it. Or don't and keep it all PG for the kiddos. Recipe credit to Skinny Taste Fast and Slow Cookbook by Gina Homolka

INGREDIENTS:
2 mangoes chopped into cubes
2 tbsp sugar
1/3 cup heavy whipping cream
1/2 tsp vanilla bean paste (don't skimp on this!) or if you're desperate - vanilla extract
1/3 cup 0% Greek Yogurt
INSTRUCTIONS:
Set aside 1/2 cup of mango. Puree the rest in a blender until smooth
Use a hand mixer to whip the sugar, cream, and vanilla until it makes stiff peaks, 2-3 minutes. Then mix in the yogurt until incorporated, 15 seconds.
Layer the mango puree into a pretty cup then the whipped cream and top with the mango chunks. Optional: Chill at least 20 minutes before serving.
