Slow Cooker Chicken and Dumpling Soup - Skinny Taste Review

This is a review of the Slow Cooker Chicken and Dumpling Soup from the Skinny Taste Fast and Slow Cookbook by Gina Homolka.

This low calorie version of the fluffy dumpling comfort soup was tasty considering the 236 calories per 1 2/3 cup serving. The dumplings themselves are light in texture and fairly simple to mix; however, I would say that the amount of flour it called for made it too watery and I ended up adding nearly double the flour in order for it not to disintegrate in the soup. Overall, it's a basic broth based chicken soup with the added dumplings and eliminating the cream that would otherwise raise the calorie count.

Personally, this recipe was okay. It was easy enough to make but not mind-blowing as the more creamy-based versions I've had. But for being low calorie, it's worth it to add to your soup rotation. However, this cookbook has much better recipes that you would never know are low in calories - this one is just basic so it's definitely a #kidfriendlyrecipe. But if you got carrots, onions, celery, broth and chicken that you gotta use up... go for it on this recipe.

Margot's Special Notes:
Double-ish the flour for the dumplings to make the consistency thick enough to not fall apart.... but don't go dumping it all at one time, spoon it in until it sticks to itself.
I used a purple carrot which stained my dish a slight tint of pink... lol... try to stick to orange, yellow, or white carrots to avoid that little #cookingblunder
Be sure to season, the recipe doesn't advise you to add salt to the broth so season season season with the salt just before adding the dumplings to make sure it doesn't end up bland .
The soup has to be BOILING before you add the dumplings and they will double in size so heed the teaspoon portion or you'll end up with giant meatball size dumplings.
